This delicate, tangy, silk road-spiced Persian kofta is deliciously different. Done right, the kofta bursts with flavour. Sear the kofta on the outside and keep it juicy on the inside, so that the tender meat can be savoured with a piece of flatbread that soaks up the dripping fat and cooking juices.
