The delicate texture and sweet taste make these scallops an absolute must in any kitchen. Great as starters, on sea food platters or served in a ceviche. For best results, make sure your pan is set on high heat, add a clove of crushed garlic and a drizzle of olive oil. Sear your scallops to give them a gorgeous golden brown colour on each side. Scallops are best fried in a little butter for a few seconds on each side.
